Two Things About Acero


First, Acero – Jim Fiala’s little all-Italian eatery in Maplewood that means “maple” and is pronounced ah-CHAIR-oh – is featured in the September issue of Bon Appetit. Acero is one of 12 U.S. restaurants featured in Molto Americano, an article highlighting the “new breed of Italian restaurants ... transforming the cuisine into something utterly American, with cross-cultural nods, frequent improvisation, and irreverent rule-breaking.” Acero’s recipe for Cauliflower Ravioli with Guanciale (salt-cured pork jowl and cheek) is included and looks terribly tempting in the accompanying photo.

Second, you can taste that unusual ravioli dish next Wednesday at Acero’s five-course wine dinner featuring wines produced by Terredora Wines in Campania. Fiala said white wines from this area of southern Italy are among the most “honeyed and beautiful wines made in Italy today.” Luccio Mastroberardino, Terredora’s winemaker, will on hand to pour and explain his family’s wines and perhaps share stories about his famous winemaking family.
